There is so much that is wrong with us living on the inside of a hollow sphere theory.
The biggest of which is how the sun orbits around a gravitational force created by nothing, to how the sun being that small could give off enough heat to actually warm the earth, never mind the changing procession of stars and constellations.
Sure there are problems when you try to apply the standard model to a hollow earth.
However, we only have to make a few adjustments to our understanding of physics to make it work.
First of all, light does not travel in straight lines, it curves toward the center of our universe (which is directly above our heads.) This causes the horizon to always appear eye level, and also allows us to see a bit further than we should on a convex surface, but still causes distant objects to disappear bottom first (as it would on a convex surface. This can be difficult to absorb at first. Try this diagram.
Second, Gravity is not an attractive force. Gravity is a repelling force outward from the universal center/source. It pushes us and our atmosphere against the surface of our enclosed earth.
Third, the surface of the Earth does not move. The Celestial Sphere spins and wobbles in the sky. This is why we see the changing precession of stars and constellations. However, it also explains why we see virtually no parallax in the stars over thousands of years.
I realize this notion of a concave earth is ridiculous upon first glance. I too went through American Academia and took advanced physics courses. It was difficult for me to shake the standard model.
However, now that I have given it the time and thought, it appears to me that the concave model actually describes our universe as well if not better than the standard model.

You're excluding relativity when talking about galaxies. Include that and they work. Relativity is all about the reaaaally big and conversely quantum mechanics is about the reaaaally small.
