I think we're using the word coincidence differently. I was thinking coincidental would be a random day. Not a coincidence would be something like sacrificing the guy.
Which... is what comes to mind for me. Sacrificing a guy on the first day of spring sounds like an attempt at making the guy in some sense reborn. Or at least, at making something reborn. Spring is the season of renewal.
The thing that gets reborn without the slumbering old man could be the family. That would arguably have a more rational basis. If the sacrifice was strictly symbolic rather than ritualistic, it's also really easy to do in a way that makes it literally true that he passed away peacefully in his sleep.
My wholly unsourced speculation notwithstanding, the random event idea shouldn't be totally junked... It's pretty hard to keep people alive at 101 years old. I think humanity is on track to figure it out, but the status quo still seems to be that at some point immortality becomes out of anyone's price range.
