Read that wickedpedia entry on Agaritine. Agaritine gets turned into Hydrogen Peroxide in your liver. Hydrogen Peroxide then breaks DNA immediately. I believe I'm reading that right.
Shitake, Maitake and others don't have that chemical compound at all. Listen to that clip. Stamets says he only consumes 5 types (cooked). Should be safe to eat those.

This has to be it. If you keep listening to the podcast, Stamets gets on the topic of enoki mushrooms just a few minutes later and mentions that enoki factories in Japan give the deformed enoki mushrooms that can't be sold to the public to their workers and so those workers' families eat a higher per capita consumption of enoki than anywhere else in Japan...
And guess what?
It resulted in a reduction of all cancers across the board.
Stamets says he has multiple articles online about this (Huffington Post, I think), so it's all peer reviewed and verifiable.
So the fact that he landed on the subject of mushrooms and cancer almost immediately after opting to not talk about the "negative effects" of portobellos is rather... interesting.

Potrobello, Cremini, and the plain white button mushrooms (all the same family) contain Agaritine.
Shitake, Maitake, magic mushrooms and most others don't have Agaritine. Read up on what Agaritine may do to you.
I'll eat mushrooms that don't have Agaritine. Now we all know.

Don't forget about gyromitrin another hydrazine derivative also produced by Portabellos that once hydrolyzed with water becomes monomethylhydrazine aka rocket fuel a very toxic substance and known carcinogen. Apparently the only way to remove it completely is to chop the mushroom into small pieces and boil repeatedly.

A mushroom growing friend of mine had a good theory. Apparently there are areas in PA that are portabella territory. Some of the companies involved also have rumored ties to Italian Mafia and mushroom growing would be a great laundering strategy. Paul condemning them would cut into their profit margins maybe. It's a stretch but not out of the question....

Hey your prob right about the mafia over on the east coast. So im from Portland Oregon and Paul lives up in the sound area. Not to be prejudice or anything but we have a lot of southeast asian and chinese people out here and they love thier mushrooms. When i was growing up in portland every year during mushroom season the woods became a war zone until they armed the forest service guys and sent an army of them to protect regular folks from being robbed and attacked and run out of thier camps by armed gangs. Their serious. Like the mafia on the east coast the chinese exist over here esp. Up in Vancouver and seattle and im sure they have a huge hand in imoporting from china as well as farming portabellas here. So yeah i would keep my mouth shut too.
